			<content:encoded><![CDATA[<p><p>Allison Westfahl doesn't have a problem with gluten. </p><p>Other than the fact that she thinks it's making America fat. </p><p>Westfahl, the director of personal training at Boulder's Flatiron Athletic Club, says she discovered what she now calls the "gluten-free fat loss plan" by accident. </p><p>She wasn't trying to lose weight. But in 2004 when her aunt was diagnosed with Celiac disease -- an autoimmune disorder that inhibits the body from digesting gluten-containing foods -- Westfahl decided to cut back, too. The disease was hereditary. And although Westfahl hadn't experienced any serious symptoms associated with gluten intolerance, she had been suffering fatigue, bloating and endometriosis. </p><p>She cut the gluten and her symptoms immediately vanished, she says. </p><p>"And the fantastic side effect is I lost 15 pounds," she says. </p><p>As a nationally known exercise physiologist and endurance sports coach, Westfahl says she says she thought she knew everything about nutrition and health, so the weight loss took her by surprise. She began researching and designed a gluten-free meal plan. She ran willing clients through it for years, collecting data. </p><p>"Across the board, everyone who tried it lost weight," she says. </p><p>While many people who eliminate gluten lose weight, nutritionists say that often is a result of eating fewer processed foods, which generally contain refined flour, lots of sugar, fat and sodium. Eating gluten in whole grains such as wheat is a healthy choice, they say. Westfahl, however, says the gluten itself contributes to weight gain. </p><p>Westfahl decided to put her meal plan and theories on paper, and self-published a book this May called "The Gluten Free Fat Loss Plan." </p><p>The premise: Eliminate hard-to-digest gluten, and you'll shed pounds. It’s 1600 calories a day with a mix of protiens, many fruits and veggies and appropriate portions of carbs and dairy. I am 21 years old, weigh 135 lbs and am 5’2. I exercise 5 times a week, 30-40 minutes of cardio each time (that is what the magazine suggests). According to my BMR, I should lose approx 1.2 lbs a week or so.
